Wieprzowina

In Polish, wieprzowina ("vyep-shoh-VEE-na") means "pork" meat. Pork is an essential part of Polish cuisine ("kuchnia") with cuts ranging from ham ("szynka") to shoulder ("karkówka") and from bacon ("boczek") to ribs ("żeberka").

Delicious and versatile, pork is the basis for nearly all Polish cold cuts and kielbasa, and can also be prepared as chops ("schabowe"), in stew ("gulasz"), ground ("mielone"), or as drippings ("smalec").
