White Borscht Concentrate
Mix this white borscht concentrate with 2 quarts of water to make 4-6 finished servings. Also known "żurek", it is made from fermented rye, usually mixed with a broth of boiled white fresh kielbasa or sliced smoked kielbasa. Add bread or potatoes. Season with salt, pepper, and marjoram.
